breads of north India.


there are various kinds of breads generally used in the daily meals of north India. they are the major part of the staple food of most of north Indians. like the western world use breads , the roti is used in the same context. even we share the proverb bread and butter like daal roti.
roti is the main ingradient of the daily meal of average indian. there are various versions and types of these which i want to share with you.
phulka- is the dough plaited in round shape oven cooked on TAWA.
tikda- is the rough version of the phulka. directly grilled on the fire.
paniya- is a kind of tikda . the dough is sandwiched between two green leaves and then placed between angara generally burried in the soil. it gives you the taste of the leaves.

kalla roti- earthen pot like tawa(pan)is used . it gives you the smoky flavor in the phulka.
gakkad- is made on the kanda(cakes made by the cow dung used as fuel, very common in India).
baati- also named as bafley in some places is made by boiling the small (pancakes style) dough bits and then scortched in the direct heat , and then dipped in ghee.
besides this there are versions of roti.

like missi roti is mixed with gram flour called besan. also bajra roti mixed with bajra. makai roti mixed with makka flour.
paratha- this is multi plaited version of roti. its of two types one is plain paratha made of flour and there is stuffed paratha. this is made with fillers like vegetables.
meetha paratha- this is used with the stuffing sugar .
puri- puri is the fried roti. this is also used with mixing various flours of grains like besan etc.

India lives in villages.

India is a rural country . more than 70% of the population lives in villages. they are called gaon. kasba basti .
the population has its major occupation as agriculture.







most of the population is not economically healthy if we count the averages. and still uses the old ways of farming. although the new technology is strongly and speedily creeping into this. 

 

 the rural India is still green and full of life despite disparities and problems.

the villagers are simple people and largely still live in old fashioned houses.

water is a problem in many villages , they still depend on the monsoon for the crops and have to fetch drinking water from the village wells or the river around.

still there are villages where there is no electricity at all .

every letter is a seed.

every letter or a sound unit is a seed. it has its own energy and utility and effects. we all are affected by the words that are the compositions of these beej. the entire universe is changing because of these sound units and their compositions. they are the power units . In sanskrit there are studies on each letter and sound units . they are divided into swaras , vyanjana and dhatu.  the akshara are the entities of these three . and literally means that does not perish or ends. the swaras are the main units also called pranas. (the life). and vyanjana are the jewels the embellishments of a speech (now it is translated as consonants).

BHIKHARI

BHIKSHUK
is an old perceived tradition in india . 
the bhikshuk has denigrated to bhikkhu and then to bhikhari. 

 
bhikhuk is not same as beggars. they are the persons who have sacrificed their wishes and the mundane world for its selfish and temporary outlook . they seek the ultimate goal of life. this is called the moksh. the meaning of the word moksh is similar to mukti that is freedom . this freedom is little different from the common connotations of the word freedom . it means freedom from the clutches of selfish and wishes . it has been observed by the bhikshuk that the selfish and wishes are the only problems of any life. to achieve freedom from these is the goal of life . that is the life which is free from both sorrows and happiness. it perceives happiness and sorrows the resultants of either fulfillment of a wish or selfish or failure of a wish or selfish.so when you are happy , its just another perspective of a sorrow . the root cause of all ills is selfish and wishes. wishes are the embodiments of selfish in one form or the other. 
so bhikshuk is the person who has abandoned the selfish. he/she does not wish to keep , collect , gather, earn things like clothes , house, articles , food or for that matter anything that will attach him/her with things . this attainment or abandonment of unattachment is bhikshuk. 
 
these bhikshuk were used to be receive alms as food or clothes from the benevolent people . this is called bhiksha. a donation away from the abhipsa.

INDIA 2010 IS GOING TO BE A LONG JOURNEY TOWARDS REAL INDEPENDENCE AND AT THE SAME TIME SHARING WITH THE WORLD. INDEPENDENCE I MEAN BY FREEDOM . WE DO NOT DEPEND ON ANYBODY FOR OUR NEEDS AND FULFULLMENT BUT SHARING MEANS THE TOGETHERNESS. WE ARE NOT GOING TO BE A COUNTRY WITH A SNOB , BUT WITH HELPFUL AND SHARING COUNTRY KNOWN TO BE WITH OPEN HANDS AND OPEN MINDS .
